Cheesy Lazy Biscuits for my Love

It is been a long time that my fiance has been craving my biscuits and I cannot blame him. My biscuits are southern-grandma-goodness. Even when today is the kind of Sunday in which you only want to stay in bed all morning, love is king, so you just wake up at seven and cook your heart out.


I read once that you should be able to make biscuits even with a colossal hangover. As it takes less than an hour and just a few ingredients to make delicious, fluffy biscuits, it is the perfect bread for a lazy Sunday like this one.


Here are the ingredients for these glorious cheesy pillows of love:


- 2 cups of all-purpose flour, plus a little bit more for dusting

- 1/4 cup of Parmesan cheese

- 1 tablespoon of dried oregano

- 2 tablespoons of baking powder

- 1 tablespoon of sugar

- 1 scant teaspoon of salt

- 5 tablespoons of cold, unsalted butter

- 1 cup of whole milk


Everybody knows that a picture speaks a thousand words, so I will make more use of them than usual just because I can. Also, did I already say it was a lazy Sunday? So, let's slothfully put our hands in the dough.


Preheat your oven to 425º. Sift flour, baking powder, sugar and salt into a big bowl. Cut butter into small cubes and add it to the dry ingredients. To keep things cool, use a fork or pastry cutter to mix it all until crumbly. It is OK if some chunks of butter remain bigger than others. In fact it is more than OK, it is the way it should be! So, do not over do it. Remember you are a lazy ass. Add the milk, keep mixing until you get a big ball of dough. Take this big ball onto a floured surface and shape it in a rectangle form.


Even if you do not feel like it, take the time to grate your Parmesan cheese. It makes all the difference. Sprinkle the dough with half of it and half of the oregano. Fold the dough and shape it again as a rough rectangle. Cover it with a kitchen cloth and let it be for 30 minutes. During this time you can drink your tea or go back to bed with your love. It all depends on your priorities.


After those 30 minutes it is time to sprinkle the remaining cheese and oregano. Fold your dough again into the usual rectangle shape and using a floured biscuit or cookie cutter, cut the dough into perfect circles. The secret is not to twist the cutter. This allows biscuits to rise beautifully.


Place your biscuits on a cast iron pan. They will grow a bit, so leave some room between these fellows. Bake them until golden brown. It always depends on the oven, but usually it should take 12-15 minutes to be done. Now that the house is filled with this heart warming fresh baked biscuit smell, you can take them out, put them in a tray and take them to the bedroom where your love is waiting. This could not get any more cheesy.
